Cousin Hiking

Once fall arrives one of our favorite things to do is take hikes at the state hospital and play in the leaves. Thank goodness we hiked when we had a chance as the past two weeks have been nothing but complete rain. Cousins seem to bring out all kinds of adventures and silliness. Ashy proved to be her crazy self, climbing trees, running off and sliding down hills in her panties. (note to self never put her in a dress)

Star Friend

Cahill was so excited this past week as she was chosen to be Star friend at the co-op and she brought the snack. She has had so much fun meeting new friends and being a little social monster. Of course for show and tell she had to bring her baby and the bottle. She explained to the whole class why her baby was so important. (Proud momma)

We borrowed some boxes not needed at Meijers and decorated our own little houses.







Pumpkins and First Snow Fall

Last week we enjoyed a field trip to an apple orchard/pumpkin farm. As part of the field trip we picked out a few pumpkins to take home. Yesterday the girls painted their pumpkins while daddy carved out three large ones and mommy cooked the seeds. Then this morning when Ashlynn woke up and went to the window to say Good Morning to the sun she saw a blanket of fresh snow. Of course this meant we had to get outside as fast as possible even though we still had our pj's on.

A Gluten Free Recipe for all my Friends

If you like hot and Thai food, this recipe is made for you. The heat can be adjusted up or down or made exactly like the recipe. Let me know if any of you try and what you think about it


G-6 chicken
Ingredients
4 dried red chilis, split ( can remove seeds or not)
3 T red curry paste
1 ½ pounds of chicken cut into 1 -1 ½ pieces (salt and pepper them) thighs
1 red pepper – cut into large chuncks
Handful of pea pods
1 ½ t – minced ginger
1 T minced garlic
4 T basil
4 T cilantro
1 T soy sauce
2 T crushed peanuts
1 can of coconut milk
Peanut oil
Directions:
Heat peanut oil in the Wok and add curry paste and chilies.
Cook chicken in batches and remove from heat, then add red peppers for a few minutes to cook and then add ginger, garlic and soy sauce and let simmer for a few minutes. Add chicken back in and milk and simmer until thickened. Add the cilantro and basil at the end and a few more crushed peanuts. Serve over rice.

Rennie Orchard Field Trip

Today we had a blast celebrating fall with a bunch of homeschooling families at Rennie Orchards. We had a long hayride, learned how to press cider, chose our own pumpkins and picked a few apples. But really the best part of all of it was seeing our friends! The trip ended with rain and a beautiful rainbow..
