G-6 chicken
Ingredients
4 dried red chilis, split ( can remove seeds or not)
3 T red curry paste
1 ½ pounds of chicken cut into 1 -1 ½ pieces (salt and
pepper them) thighs
1 red pepper – cut into large chuncks
Handful of pea pods
1 ½ t – minced ginger
1 T minced garlic
4 T basil
4 T cilantro
1 T soy sauce
2 T crushed peanuts
1 can of coconut milk
Peanut oil
Directions:
Heat peanut oil in the Wok and add curry paste and chilies.
Cook chicken in batches and remove from heat, then add red
peppers for a few minutes to cook and then add ginger, garlic and soy sauce and
let simmer for a few minutes. Add chicken back in and milk and simmer until
thickened. Add the cilantro and basil at the end and a few more crushed
peanuts. Serve over rice.
